Bouley for You: David Bouley Triumphs in Miami

red_seven_wolfgang_puckFF.jpgIn late 2006, chef David Bouley, the man behind Danube and Bouley Bakery & Market, was officially welcomed to Miami with the opening of david bouley Evolution, a new restaurant in the Ritz-Carlton South Beach.

Bouley's first venture outside of Manhattan is getting rave reviews. The seasonal menu mixes Japanese, Mediterranean, and American flavors (appetizers from $14 to $22, entrées from $32 to $42). Main courses might include Yellowtail with Hon Shimeji Mushrooms and Cavaillon Melon or Sweet Maryland Crabmeat in an Ocean Herbal Broth. The Phyllo-Crusted Florida Shrimp is sensational.

Despite all the mixing and blending of flavors, Bouley claims this isn't fusion cuisine. Whatever it is, it's struck a chord with locals, who pack themselves night after night into the handsomely designed, Art Deco space. The spread encompasses a lounge, sushi bar, dining room, and two private rooms. (1669 Collins Avenue; 305-604-6090).
