Hey, my sister and I are driving down to Orlando for 4th of July this year. Because of work we will be driving straight through on the way down so we can get the most out of our week but we'd rather split the drive on the ride up. What is a good stopping point on the ride from FL to NJ? We're going to take 95 to 81 so we avoid traffic around DC and whatnot. Thoughts?

charleston is a fantastic place to visit and enjoy. savannah too !personally zi prefer Charleston
Are you looking for someplace to stop for a few days or are you asking for places to stop "just for the night"?
If it's the former, then places like Charleston or Savannah will fill the bill - they are both very nice cities with many interesting things to see and do.
If, however you are just looking for a motel to spend the night than your best bet is to calculate how many days you want to spend driving and far you want to drive each day (depending on where you live in NJ it's about 1,100 miles from Orlando to New Jersey).
You can then go to Google Maps to plot out your route and see which towns/cities are near the distances you you want to drive - Google Maps even has a click and drag feature that allows you to easily change your route if you want to stop in a city that's "off the highway". FYI - There are motels and hotels (from every major chain) at almost every exit along I-95 and I-81 so finding a hotel/motel in your budget range will be relatively easy.
Florence, SC, is a major stopping point for this trip purely because of its location. They have just about every chain motel you have ever heard of. But it is less than halfway, going north so you may want to drive on for another hour.
Where will you leave I-95 for I-81?
Do you use I-26 to I-77 near Columbia SC?
How about Rock Hill just south of Charlotte?
I used to drive this route from central PA to Melbourne FL and agree it is better than the beltway around DC to get to Harrisburg, PA. With only 1 driver, it is better to drive 2 days to get to northern NJ.
