Can't give too you much advice on nightlife (too old), but for shopping, City Place is very nice - it is a mixed use center with lots of retail on the ground floor (Macy's, Barnes & Noble, Banana Republic eg), with multiple buildings laid out on the area street grid. Nice for walking around. There is a movieplex, and some nice restaurants too. Also, there is a very nice center called Downtown at the Gardens, located just off I-95 in Palm Beach Gardens a few exits north of West Palm. It has good shopping, lots of restaurants, including one of our favorites called The Yard House (about 75 beers on tap).
Actually, for nightlife I think Clematis Street in WPB is very popular, and there are a number of good restaurants and shops along that street as well. My wife and I really like Cabana, which is a nuevo latino place.

The beaches are very nice in that area, and they are very popular. None of the beaches are in West Palm, though, you would need to go over to Palm Beach to get to the beaches. When I go, we stay at Singer Island, so I'm not sure what public beaches they have in Palm Beach.
One very nice, and large, public beach in the area is Deerfield Beach, which is about 1/2 hour south of WPB via I-95.
Palm Beach has nice public beaches near Green's Pharmacy and at the end of Worth Avenue. you may also want to rent bikes at the bike shops near Green's and ride the bike paths along the lake side of PB for beautiful scenery or jog or walk the bike paths. Green's serves breakfast and lunch. In West Palm, try Rocos Tacos or a few other spots on Clematis Street for a younger group of people.
Definitely Clematis at night. For beaches I would recommend Delray Beach. It's about 30 minutes away but the beach is amazing and there are a few nice beach bar/eateries. And downtown Delray is great, too.
