Weekend Getaway for Adults Near New York City

Hello fodorites...my friends and I, all in our 50's, are interested in doing a weekend get away this summer that has some activities and maybe is all inclusive. We were looking at Club Getaway and that sounds ideal, except that it gets too many negative reviews in terms of the accomodations. Does anyone have any thoughts? We would like something not more than 2 hours or so away from Manhattan. It doesn't have to be all inclusive either. We are three couples.

Thanks.

Berkshires? Cold Spring? Amish Country? Montauk? Jersey Shore? Hudson? Rhinebeck?

What are your interests?

Not so much the area as a hotel/inn recommendation that might have some organized activities and either good food on the premises or very close by. Water activities would be good but really anything. Club Getaway has exactly waht we're looking for but as I mentioned, the accomodations don't get very good reviews...we don't need fancy but clean.
