Several years ago we did the wagon tour. Our guide lived in the valley so had lots of interesting information to share with us.
There is also an ATV tour of the rim. www.ridetherim.com
You can hike into the valley--the road in, while not very long, is very steep and kills your knees. I understand that much of valley is private land so heed all kapu signs.
Do not attempt to drive into the valley. In fact, the road into Waipio is one the car rental companies 'forbid'. It can be done in a four-wheel drive but the road is steep and narrow and if you meet someone on the road, it's disconcerting--to say the least.

My journal is not handy, but I did a group thing meeting a few miles from there. We were transported down into the valley in jeeps, then rode horseback through the valley. It was a great day.
