Nigel, one thing you should know about New Hampshire is there can sometimes be a shortage of hotel rooms on the weekends. My guess is that the same may be true in Vermont. This is especially true on a big race weekend here in NH. The coast of Maine can be even worst if the weather is nice. If you are not making reservations ahead of time make sure you try to get a room before evening or you could drive well out of your way to find something. In NH you will want to spend your time in the mountains. If you want coastal scenery go to Maine. In the mountains you may want to go to the top of Mt. Washington. If you don't go on a clear day it won't be worth the money. I would skip the cog rail and take the vans it's not worth the wear and tear to your own car. If anything else pops to mind I'll add it later.

You don't indicate which part of NH or VT you will be vacationing. NH and VT are both very nice states. I agree that you can not wait for the last minute to reserve something. I grew up in VT, so maybe I can be of some help.
First, I'll start with NH. Definatly go to the top of Mt. Washington if it is a nice day. Or, you can take the chairlift at Bretton Woods Ski Area to get a breathtaking view of the mountain. Also visit Franconia Notch (Interstate 93). Here you'll find the "Old Man of the Mountains" stone face, theBasin, and a Tramway up Cannon Mt. for a mountain top view.
In Vermont there is a lot to do! You can visit the Fairbanks Museum and Planitarium in St. Johnsbury, watch the famous Cabot Cheddar Cheese be made at the factory in Cabot, visit the Ben and Jerry's factory in Waterbury, or visit the ski town of Stowe for shopping, biking, in-line skating, and hiking. Burlington is a great city--great views of Lake Champlain, great restaraunts, shopping and nightlife.

Portsmouth; Canterbury Shaker Museum; boating on Lake Winnipesaukee; Kancamagus Hiway; Franconia Notch; Crawford Notch; Mount Washington (must-see if weather is clear; don't bother if it's cloudy); Bath Covered Bridge.
Shelburne Museum; Smuggler's Notch; Ben & Jerry's; Windsor Covered Bridge; Cal Coolidge Homestead (IF you're interested in his presidency); Montpelier; Hiway 100 (just about anywhere).

The above suggestions are great. Also, it's the beginning of fair time here in NH (and probably VT). You might want to visit a county fair, eat junk food, watch tractor or horse pulling, look at the arts and crafts in the 4-H building. Many towns have ham and bean suppers on Sat night to raise money. These are usually a good deal but make sure you go to one that offers pie for dessert. In August the League of Arts and Crafts will be having their annual fair at Mt Sunapee State Park. You can spend half a day looking and enjoying demonstrations. It's a week long event, most are contemporary crafts. Canoeing will be easy in August when the rivers are low, you can rent a canoe and spend a day or half day on a quiet paddle. Bring a picnic lunch. Keep your eyes open and travel secondary roads so you might see some wildlife altho a mother wild turkey and her young have been feeding right next to Rt 93 between exit 17 and 16 southbound lane just above Concord NH. We also like to find chicken barbecue dinners held by local groups such as firemen, 4-H, etc. For a small cruise, the nature guides on Squam Lake are very nice. Years ago we had a wonderful large boat cruise of Portsmouth harbor which was narrated. The dinner cruise on Sunapee is also nice because it is narrated. Have a wonderful time.
