Valentine's in Vegas

We have a trip planned with my husband's brother and his wife in a few weeks. The four of us will be arriving in Las Vegas the morning of the 14th, staying through the 15th at Bally's. Our next stop is the Desert Pearl near Zion NP for 2 nights and we come home Sunday night.
It just occurred to me we will probably need reservations at least for Valentine's Day! We love good food and would be willing to splurge a bit (Max $60 pp - not including wine/drinks). Any suggestions?
Also we'd love suggestions for restaurants near Zion...

I would dine at Paris or Bellagio, both close to Bally's. I don't dine in that price range, so maybe others have suggestions.

Thanks for the suggestions - any particular restaurant come to mind? Lord knows we are not committed to spending money if we don't have to! Really I think we are after excellent food, a "special night out" ambience and good service - at any price!
I have searched on this topic and see mentions of Circo, Rosemary's, one with a French name I can not remember and Lawry's. Any others with thoughts?

I really don't know since I'm a more budget diner. Circo at the Bellagio looks interesting, and in your price range.

Bouchon in the Venetian? Also, there's another very nice restaurant in the Wynn.... can't recall the name right now.

I was in Vegas in September and had one of my all time best meals there for the price. We loved the steakhouse at Ballys.

My wife enjoyed a nice dinner later that visit after I had departed at Les Artistes in Paris which also lists itself as a steakhouse.

We have had very nice dinner with supurb service at the Eifel Tower restaurant but it may be pushing your budget, may also be tough to get into for Valentines at this time.

Make a reservation soon.

We had a wonderful meal at Daniel Boulud Brasserie at the Wynn..He is the famous chef from Paris and NYC and the french food was outstanding and somewhat reasonable and the water show is wild.
I would make reservations soon since it is Valentine's Day.
