Vail/CO for 5 Days in the Fall

My girlfriend and I have a five day trip planned to Vail, CO straddling the end of September and beginning of December. We are in need of restaurant suggestions, activity suggestions and all things in between. We haven't been to Colorado in the off-season but consider ourselves to be relatively outdoor, active mid-to-late 20 adventurers!

We are traveling on a bit of a budget but would like to find some great local restaurants (aka non-touristy) and would like an insiders suggestions of great day trips and activities. We are wanting to go white water rafting one day (suggestions of routes and companies are welcome!), mountain biking another and foresee hiking to be a must.

We were thinking a trip to Boulder for the day would be nice but any sort of ideal itineraries or suggestions (including some great spots for seeing the turning leaves) and deals in the area for five days is hugely appreciated.
