Looking for a town that can match our wants.
1. Wooded area where dirt biking is allowed-offroad style.
2. Mountain views would be enjoyed.
3. Rural town feel wanted-suburb of large town disliked.
3. @ 30 minute drive to a town w/ population of around 2000-3000 people-want services nearby.
any ideas? recommendations? other states with towns to match our list?

There are many places that could fit the bill - but Sun Valley in Idaho and Park City in Utah come to mind, althought they might be a bit bigger than what ye are seeking?
And my ole home state of Oregon could fit the bill - a could Colorado - or Montana - or just about any state in the West.
During visits to Yellowstone, Grand Teton areas I've thought the small towns north of Idaho Falls, Rigby, Rexburg and Ashton seemed like nice places. Also to the south, Montpelier and St. Charles near Bear Lake.
Bigger cities, but might fit the bill, Cedar City in Utah and Bonners Ferry or Sandpoint in Idaho.

All have Amtrak stations in case you want to leave.

I'm not sure what a "rural town" is - but I certainly think 2 to 3K people would qualify. That's really a village or a hamlet - not a town.
Do you really just want open space with nothing but a couple of houses?
(Sorry - this is so foreign to me - there are about 8K people on my block.)
Stanley, Idaho (which has a lovely view of the Sawtooth Mountains) has a year-round population of 64--definitely a rural town feel! It's an hour to (somewhat) larger cities, though.
Stanley is beautiful and an hour or so from Sun Valley. They get more people for breakfast or lunch/dinner in a day from fishermen/hunters/skiers/snowmobilers,hikers and other tourists than their permanent population.

Kanab in southern Utah is big on atV recreation.
Yes, I was going to add no off-road dirt biking anywhere near Park City, and PC is bigger than you are talking about.
Somewhere in southcentral or far southwest (NV border) might fit the bill.
Exactly how much sophistication are you expecting? You won't get much in either UT or ID for the population you ask for....
