In KC, look for something on the Country Club Plaza. The Raphael is my fav, but there are many other options. Hotel Phillips downtown is nice, too.

I stayed at he Ritz-Carlton on the Plaza a couple of years ago. I believe it is now a Fairmont. Great location and excellent facilities. I've heard nothing but great things about the Raphael, however I've never stayed there.

You would get more responses to your post if you listed your destinations in the title. And, "upscale" is always subjective.
Why are you coming to St. Louis? If you are only coming to see the Arch, you should stay downtown. If you have a more wide-ranging agenda, you have more options.
I think the only 5* in St. Louis is the Ritz-Carlton in Clayton.
