Can you do that without having to go to the park? Are there any other tours of that sort you might recommend? My kids would like to see where they make movies, etc. Just trying to figure out how to do that.

We did the tour at Warner Brothers. We saw the sets of a few TV shows and movies. If they are filming you will see actors, etc. We went over Christmas and it was very quiet, but we enjoyed it. My kids are 12 and 9. I think the minimum age is 8.
If you just want the studio tour without the theme park, then I highly recommend the Warner Bros. tour. We all absolutely loved it. We also got to see John Stamos while touring in our golf cart. Too bad they didn't let us take pictures at that moment but it was enjoyable talking to him for a few minutes as he engaged with our tour for a bit.
Third for WB - Universal Studios tour is certainly fun, but it's more "fun" than a studio tour. There's very little actual moviemaking encounters except for driving past a few large buildings that are soundstages, and driving through a permanent street scene or two. Everything else is entertainment (Jaws attacking the tram, that sort of thing). Warner Bros will take you around actual sound stages in which actual filming is taking place.
