trip from Memphis, TN to San Antonio, TX
We are taking a trip from Memphis, TN to San Antonio, TX. We have two and a half days to travel before we have to arrive in San Antonio. Wondered what to see. Stop in New Orleans? What to see in San Antonio? We will be there 3 days.

Live in Memphis and driving your own car? One way rental car? It makes a big difference.
There are two ways to get to San Antonio from Memphis.
Both will get you to SAS between 10PM and 12:30AM which is not so good.
The one I like best is the City of New Orleans from MEM to NOL and spend a night (or 2) and then take the Sunset Limited on Monday, Thursday or Saturday at 9AM. The train arrives 15+ hours later after midnight.
The other way is the CONO north overnight to Chicago and spend over 4 hours in Chicago and then taking the Texas Eagle arriving after 10 PM in SAS.

Or you can drive and eschew Amtrak.
Alamo, missions and Riverwalk are the standard fare for San Antonio. Austin is an hour north of it.
What to see and where to route yourself depend upon your interests. What are they?

Driving to San Antonio.
We like to see "off the tourist trap" things. Say in San Antonio, all know of the river walk, Alamo, etc. There are time that friends say, "we found the neatest place" be it a restaurant, museum, store, home to see, etc.
We enjoy most everything other than sports.
