Heading from El Paso to San Antonio: Fort Stockton, Ozona, Junction, Kerrville
The best thing to see on the way is the Caverns of Sonora.

If you were planning on driving a rental car, it's possible to sleep in coach on the Sunset Limited and wake up in San Antonio.
