Suggestions for solo female HI trip!

I have been to HI twice with the hubby. We have visited family on Oahu and have been all over that island, and have also spent plenty of time on Maui. I am looking for a nice, relaxing solo vacation and would love some advice on different locations!
I don't want to stay at a huge resort, as I don't plan on spending much time at the hotel. I love to just sit on the beach reading and relaxing, beach-combing, snorkeling, kayaking and I would love to try parasailing. I love beautiful scenery with waterfalls and beautiful plants.
I am looking for a more laid back and quiet atmosphere. It would be great to be near shops and restaurants, but still have more of a small town feel. I would love to dive more into the HI culture, and less of the tourist attractions. I would more than likely be renting a vehicle, so getting around will not be an issue.
I have read a lot of great things about Kauai and also the remoteness of Lanai. If anyone has any suggestions or tips I would love to hear them!
