Staying @ Boulders Resort, need to plan an activity for a day

We have only 3 nights in Arizona for a conference next week. We have 1 free day to plan something on our own.....considering ATV, Pontoon Boat rental (Pleasant Lake, I believe) or a hot air balloon. Given the current HOT temps, what would be best? 2 mid 40's adults....never done an ATV thing....we have a boat at home in Florida....have done hot air balloon 1x in Tuscany & loved it.....

Suggestions?
