We are trying to decide whether to visit the Hill Country as a day trip from San Antonio or if it would be better to spend a night in Fredericksburg or New Braunfels. Your advice?

You can easily get to Fredericksburg for a day trip but the Hill Country is a large area. If you are wanting to see more of it, you should stay in Fredericksburg--more centrally located in the HC than New Braunfels.
There's a lot to see and do in Fredericksburg and I'd recommend an overnight stay. If you plan to see the National Museum of the Pacific War (Nimitz Museum), you'll probably need an overnight stay. You could easily spend an entire day just in that museum.

Good choice. If you like live music and if there's someone you like performing at the Gruene Dance Hall, I'd stay in Gruene or NB. Check out their schedule - http://gruenehall.com/
Both Fredericksburg and New Braunfels are easy, easy day trips from San Antonio. Actually I enjoy both Gruene (a section of New Braunfels) and Boerne more than Fredericksburg these days.
I second starrs Gruene Hall recommendation. Odds are you will not know who is performing, but its fun to drop in and listen to whomever it is, usually at no cost tho they might pass a tip bucket. We were there last night to hear what is left of the Band of Heathens, a group we discovered there years ago, then they got to be popular enough to do tours to Europe and around the US, now sadly breaking up. You never know what you'll hear from new artists, or on busier nights if someone like Ray Wylie Hubbard might drop in and do a song, (happened once while we were there), making it all the more fun.
Thanks for the Gruene suggestion. It sounds like a lot of fun but now we know we won't be in Gruene at show time.
