A wonderful, historic area with a lot of antique shops, crafts, etc. is Berea, KY. It is right off I-75 at the Berea exit, approximately 40 miles south of Lexington, KY. Visit their website at www.Berea.com Make sure you eat at the Boone Tavern!!
We were in Gatlinburg, Tenn. a few years ago for a special event. I do remember walking around in town and seeing lots of antique shops and specialty places. This town is just Southeast of Knoxville. I think Dollywood is around there too but we didn't see that.
About and hour and a half east of Knoxville is Jonesborough, Tennessee's oldest town. Interesting shops and B&B's. Another nearby town, with a delightful old section is Greenville, home of Andrew Johnson. Hope you have a chance to visit Smoky Mtn National Park -- it's a treasure. (I also second the vote for Berea - it's a great spot)
