National Park website lists three cruise operators:

Are there other operators like sailboating?
Can someone suggest which one provides the best view and wide life spotting? What's the best time to take the cruise, i.e., early in the morning or late in the evening? Hopefully the cruise take less than two hours.

signal mtn
gtlc says the rent boats or offer guided fishing trips
signal rents boats and offres whitewater rafting trips.
None of them are cruises.

There is a ca. 2 hour long sightseeing cruise that leaves from the marina at Colter Bay. This is the only link I was able to find for it:

I did this when I was there a few years ago and enjoyed it.
J62 is right about the one at Jenny Lake. It's a lake ferry, not a cruise. I'm not familiar with the other two referenced.
I would suggest a scenic rafting trip down the Snake River (very different from a whitewater rafting trip). Be sure to use one of the outfitters that has a permit to float through the Natl Park itself (as opposed to other stretches of the river). Great wildlife viewing. I think the only two companies with permits inside the park are Barker Ewing (www.barkerewing.com) and Solitude (www.grand-teton-scenic-floats.com).
We rented a boat at Signal Mtn Lodge and enjoyed it and our beautiful views from the water.

Signal Mountain Lodge has a float trip that leaves from its restaurant. Is this what you mean by a cruise? We went on the trip at 7:30 AM and saw lots of wildlife. This is not a zoo so there is a small amount of luck involved in spotting wildlife. The trip returned at 11:00 or so. I would recommend the trip for a relaxing outdoor adventure.
