Sanibel-Captiva adult getaway

Wondering if there are any resorts on Sanibel or Captiva with top level service, high end rooms and an adult, even romantic atmosphere? My searches (admittedly many years ago) left me with not a great impression of cheap flowered quilts, bargain basement sofas, 1970s kitchens, and square concrete buildings with rusty screens and mostly time shares where you have to do your own housekeeping. I'm sure I'm greatly mistaken and have read many positive recent reviews since then but still can't get a handle on which places would suit us best. We are 2 very fit adults in our 60s, Florida residents, looking for a nice romantic change of scenery for 3-4 days. I love kids but really want to avoid a noisy, party-like atmosphere. Love the idea of bicycling everywhere and taking long walks on the beach. We will have our car with us as well. Need a good gym on the premises or nearby and also want to be right on the beach or steps from it. We like an old Florida cottage-y feel but don't want to sacrifice cleanliness, comfort, and service. Thank you for your recommendations.

Cottagey with top level service does exist on Islamorada in the Keys..willing to go to a resort there instead? Free bikes. All cottages, no traditional hotel rooms.
