San Fran to Seattle - 5 days

Travelling this summer as couple with our 10 and 13 year old.

We're used to driving a lot so willing to make 4-5 hour drives per day starting early with 1-2 hour stops.

Have seen itineraries like this
San Fran
Mendocino
Brookings (Redwood Forest)
Eugene
Seattle

Would like to include the following in our trip:
CA Redwoods - Avenue of Redwoods
Oregon Coast - Sea lions, Dune buggy

We are already committed for various reasons so I'd like to make the most of our trip...do you recommend Crater Lake? As a kid I remember driving for a long time just to be able to look at it -- I think it would be pretty, but not very engaging for the kids. Any suggestions /revisions of the stops based on what we'd like to do? Other suggestions? We also like to eat local specialties, so restaurant reco's appreciated!
