Salt Lake City to New York City hwy 50 vs interstate 70

My husband and I are driving mid May from SLC Utah to New York City area. We have done this drive many times on interstate 80 and once on US 70, I want to make the journey fun and interesting and maybe take 7-10 days. We are thinking of starting out in Moab and then we are open from there. Any suggestions regarding quaint lodging( I would like to avoid roadside motels if possible but can handle a few Hampton Inns along the way.) Has anyone out there driven the old hwy 50 through CO KS MS IL IN OH WV??? Is it worth the detour? How much longer does it take? Any and all food and lodging recomendations welcome.
