Salem, OR to Denver, CO

Hi, my girlfriend and I are looking to drive back to school towards the end of July/beginning of August. I was looking at making it about a week, but we don't have a strict timeline. She has never been west coast so I was thinking about going down to San Francisco and cut across, take highway 101 down the coast for a bit and/or Crater Lake. Once in Cali probably hit Yosemite for a day then head across. So basically where should I hit between Yosemite and Denver? I have to go into Denver from the west (I-70) so keep that in mind with any suggestions. It's me and her, so we can do long drives in a day, drive at night, etc. We plan on camping (yes, in a tent) and would love some scenic hikes, I would like to avoid interstates as much as possible and I'm in a Jeep, so if you know of any good trails I would definitely be interested. And we're much more into nature/rocks/geographic formations than cities, therefore Las Vegas isn't very intriguing to us.
So please let me know with any ideas you have for us,
