The hard charging road trip from Sacramento to Birmingham AL begins this weekend, southern route. The RV likes lots of gas at frequent intervals. We will be crossing the "top" of those southern states effected by latest hurricanes - will we have any gas shortages through TX and Mississippi? Wondering if we should take a more northern route.

There does not seem to be any gas shortages only high prices (however they may be low compared to CA's steep prices).
I live in Houston and haven't seen or heard of anymore gas shortages. My in-laws live in Northern TX (Fort Worth & Dallas), and they have not mentioned anything about gas shortages either.
Absolutely no problem on I-20. There are areas affected by Rita and Katrina, but they are on I-10/12. South of your route.
