Road Trip from CO to New Orleans

I have up to two weeks on my hands and I'm contemplating a last minute road trip from western Colorado to New Orleans. I like Google's option of I-70E, I-40E to I-55S. This puts me through Wichita, Little Rock, Memphis, Jackson and NOLA.
I'm more than wiling to expand that route. I'd welcome any recommendations on favorite museums, diversions, or holes-in-the-walls along the way. I'm sure I can locate some budget accommodations, but I'm open to any ideas for those as well. I've never been to Mississippi and look forward to seeing that part of the country.
I'll be traveling by myself and I've checked weather.com and the worst of it will just be getting out of my own driveway. Thanks!
