Road trip: Boston to Salt Lake City

I'm moving out to SLC in a few weeks and will be driving from Massachusetts to Utah. We have some time to make it more of a trip than simply a drive, so our plan now is to do roughly 5-8 hours a day depending on the final destination for each day.

I've looked at a route that takes I-90 and I-80 (through upstate New York) and another that takes I-84 and I-80 (through Pennsylvania), but we are also considering a different one further south through St. Louis, Kansas City, and Denver that's a few hours longer than the others. The route we decide to take out to SLC will probably be based on which one has better food and can't-miss sights (you know, to make the 36+ hr ride somewhat enjoyable) so I'm looking for thoughts on really good restaurants and suggestions on what to see/do along the way.

Thanks!!!

Is it "I" or "we"? If there are 2 drivers I would tend toward 8 to 9 hours per day with the long daylight hours.
Stop to see Niagara Falls. If you have passports, go see the Canadian side as well.
There are several things worth seeing in Cleveland including the Rock & Roll Hall of Fame.
I hope you are not moving with any pets. It may be very hot.

If you are a foodie, the Kansas City area has one of Anthony Bourdain's "13 Places to Eat Before You Die": Oklahoma Joe's. http://www.menshealth.com/nutrition/...it-restaurants

Oklahoma Joe's recently changed its name to Joe's Kansas City, but it is still the same awesome BBQ. http://www.joeskc.com/

The original location is not far off I-70. There are two more locations further south.

Not too far away are the National World War I Museum and Memorial. Kansas City also has the Negro Leagues Baseball Museum and the American Jazz Museum, housed in the same facility.
