We're going to Birmingham to meet friends but then need ideas about where to go? We've got about a week. Festivals/fairs etc would be fun. Any suggestions?

hmmm....
Chilton County is known for their awesome peach crop. They have a place right off the interstate called "Peach Park". They have great fried pies and BBQ. A few miles from peach Park is the Confederate Memorial Cemetary which is very beautiful. A very nice picnic spot. We are right in the middle of "peach season".
About 15 miles south of B'ham, Oak Mountain State Park is located (in Pelham). It is a huge park with great trails, a nice waterfall, "beach", paddleboats and fishing. It is always a favorite area.
I have never been, but the civil rights museum is located in downtown Birmingham. As well as the art museum.
The zoo and very large botanical gardens are located in Mountain Brook...very near downtown. There is a WONDERFUL eclectic bistro located in Mountain Brook call "Chez Lulu". It is one of my favorite places to eat. They have lunch and dinner and are very reasonable.
On Saturday mornings Pepper Place Farmers Market happens downtown B'ham. It has really grown in the last few years. They have produce--but also have art, jewelry, clothing, and bath/body stuff. You can get a great breakfast there too. (Pepperplacemarket.com)
Their are a couple drive in theaters in the area. That is always fun on a summer evening.
Hope that helps. Let me know if you have any other questions....
bebalm: It's been eons ago, but we used to enjoy Lake Martin. What is offered there now-a-days? Do they rent watercraft? It's a bit of a drive, but doable.
Also, there are caves:

If you want to drive to Tuscaloosa (1-1/2hr.) you might like the Bear Museum (Coach Bear Bryant).
I second Oak Mountain. The hikes & waterfall are really nice.
