ORLANDO WITHOUT DISNEY

We will be going to Florida next month (husband, 10 year old daughter, 7 year old son, self) and will be spending most of our time in Siesta Key, Florida. However, we would like to spend one night and one full day in OR near Orlando. We did all-things-Disney last year and would like to do something different. Does anyone have any ideas for something "active" to do near Orlando? We were thinking about something like the natural springs but, it sounds like those tend to be VERY crowded. We would also love suggestions for the best hotels/resorts near Orlando - again - not Disney. We like 5 star accommodations.

Would love any thoughts - also - if anyone has any must see/do in or around Siesta Key we would love to hear those as well.
