What is there to do/see there? We will be taking the ferry from Manitowoc, so this will be a stopover...or should we skip it?

As a life-long Wisconsin resident I say "no, no way". Skip it and head up to Sturgeon Bay or even stay in Manitowoc and enjoy the lake. Ofcourse, it depends on where you're heading but I can't think of anything there unless you're a Packer fan.
If you had access to a car, a drive up and down Door County peninsula would be nice. You could see it all in a day.
I agree on the door county idea...We have had a place on lake michigan since WWII. so am partial...
A Great place to eat is Olde Stage Station in Egg Harbor. That is one town up from Sturgeon Bay and is Right on Green Bay, so you can see the body of h20 with that name... Lots of different beers on tap, a great bakery, try the fried cheese curds as an app
