Any recommendations for a couple of meals (beyond fast food) in North Platte, Nebraska? The Canteen and Brick Wall have come up but I can't find any actual information on them.

Sadly, you're not going to find a lot of great food in North Platte. Whiskey Creek is a small chain that's similar to an Outback--the food is good and the atmosphere is fun--a throw your peanuts on the floor type place.
The Brick Wall is downtown and has good food (or used to have--it's been several years since I've eaten there)--would say it's more of a lunch place, though.
The Depot Pub and Grille would be another good choice, especially if you'd like a drink with dinner.
We liked Whiskey Creek and enjoyed the food and atmosphere.
