My husband and I are planning a trip to New England in the middle of October and really aren't sure we're to go. We plan on spending three or four nights in either Main, Vermont, New Hampshire or Connecticut. We're really looking for wineries, foliage, moderate hiking in a lake/mountain atmosphere, and great seafood. Any suggestions?

The foliage will likely be done with by that time in VT, NH and ME. Peak for Connecticut is usually around Columbus Day weekend, so you may have a shot at nice foliage there.
Are you, by chance, Kelly and your husband is Andy?

Mid-October is a good time to go to Maine. Pretty quiet, but has lakes, mountains and seafood.
But I agree with Mazey. Peak foliage will have passed in most of Maine, perhaps except the Southern tip; but you'll still see some colors. Just not the best colors.
There aren't too many wineries in New England, as it's too cold and too wet. There are a couple in RI and SE Massachusettes, but those aren't in your list. Or the Finger Lakes region in NY, but that's not even New England.
