Need a vacation idea for family of 4. Have a 5 1/2 year old and 8 year old

Having trouble deciding where to go with our 8 year old son and 5 1/2 year old daughter.
I usually like to stay in one place with a beach/pool etc and then take day trips from there.

In the past we've been to Williamsburg/Busch Gardens/DC, California, Cape Cod, Rehobeth Beach, Orlando, Fort Myers,

We will be traveling from NY (either fly or drive). Yellowstone would work when they are a bit older. We've been talking about Hilton Head (but concerned about weather in late August), Montreal, Maine, Niagara Falls, Lake George

We are adventurous but also need some down time....
