Is there enough to do at Myrtle Beach to stay for an entire week? Also, is it a worthwhile family trip? Any tips on what to do, where to eat, etc.

Have you done a search of this site? There have been a lot of suggestions, comments, facts posted over the last 6 months.
As to your specific questions:
1. A weeklong stay should be fine--a lot of folks basically spend an entire week on the beach. Even if that is not your preference, the area is famous for golf, and there are quite a few attractions (from amusement park to NASCAR go-kart track to aquarium to IMAX to parasailing) and lots of shopping.
2. Myrtle Beach is very family-friendly.
If you can swing it, go on or after Labor Day, as it will be a lot less crowded. But everything will still be open, and the weather in September (and even October) is still great.
