I will be in Morristown, TN for 3 days next week. I have searched and Googled but haven't come up with more than a couple of hours of sightseeing. I will have a car . . . what are some fun things to do within a 50-mile drive?

Knoxville is about 50 miles from Morristown - lot's of things to do there - Google "Things to do in Knoxville" for more info.
Also, Great Smokey Mountains National Park is about 35 miles from Morristown - plenty of hiking and wonderful scenery there.
Agreed - there's not much in Morristown itself, though you're close to a couple of lakes if you're into boating and that sort of thing. Downtown Knoxville (specifically around Market Square and Gay Street) has been well revitalized in the last 10 years or so, and would be fun to check out. Otherwise, you can head to the mountains as RoamsAround suggests.
Morristown is between Cherokee Lake and Douglas Lake. There is plenty to do around the lake.
I would drive into Pigeon Forge and Gatlinburg. There are a ton of things to do there, also the Smoky Mountains are very pretty and lots to do and see in the mountains.
