I am planning a trip to NC very soon and was thinking about spending a few days in Mooresville/Lake Norman area. Are there many things to do for an almost 30-something single girl? I want to relax but also be able to go out at night.

If you want to relax, you don't want Lake Norman.
That area is a suburb of Charlotte. Mainly single-family home and drunken boaters on the lake (trying to get rid of drunken boating, but people won't get the message). Also personal watercraft.
If you want to go out at night, stay in Charlotte. Downtown, South Park, or some other area. If you want to relax and stare at water, I'll try to come up with a better place (probably in the mountains).
