In the Frontier Hotel, there's a Mexican restaurant with very good food. I don't recall what's it called, sorry. I do however remember the food to be very tasty.
Cayote Cafe in the MGM is THE BEST.
Star Canyon in the Venetian is a wonderful upscale Southwestern restuarant, but I'm not sure the type you are looking for if you are combining Mexican with Southwestern. Have you checked out the Zagat web site(www.zagat.com)?
The Border Grill at Mandalay Bay is wonderful. Watch out for the margaritas--they're lethal.
