This is a pretty broad topic - there is a lot of scenic countryside to see in these 3 states. Here are some ideas off the top of my head:
The Maine seacoast - lots of rocky coast, some sandy beaches, many lighthouses - Ogunquit, Kennebunkport, Boothbay, Camden, Acadia.
New Hampshire - Rugged mountains, small towns, beautiful lakes - Jackson, Littleton, Sunapee, Hanover, Lyme, Peterboro, Wolfeboro, Canterbury Shaker Village, Mt Washington Auto road
Vermont - Unspoiled, bucolic - Woodstock/Billings Farm, Waitsfield, Stowe, Middlebury, Mt Ascutney Auto road
etc,etc,etc

Some Maine lobster shacks are open weekends only after Labor Day so I would make sure to spend a weekend in Maine. These are the shacks with picnic table seating. If you are interested in organic living, I would include a visit to the Common Ground Fair that's held around the 3rd weekend in Sept in Unity ME. Most people think of lobster when they think of Maine but I would also include a visit to the Cole Transportation Museum in Bangor ME. Logging was very important.
VT: the great Vermont Corn Maze in Danville - pretty close to Littleton NH just above the White Mountains. Shelburne Museum.

la burdick chocolates in walpole, nh
restaurants: i've heard good things about richard's bistro and cotton in manchester, nh. saffron bistro in nashua, nh is good. lucia's tavola in brookline, nh is good. polly's pancake parlor up in the white mountains gets a lot of publicity.
if you have kids you can visit storyland or santa's village in the white mountains...and clarks trading post.
i'm sure there are great places for white water rafting but i've never been.

Our son and daughter in law live in Manchester NH so we go to the area each year and try to pick a different place to visit.
Richard's and Cotton Restaurants in Manchester are both very good, both in food and atmosphere. We have been to Kennebunkport and Camden Maine and enjoyed both. This past May we went to Smuggler's Notch VT(don't think your RV would make it thru the Notch), but it is a very beautiful area and close to Stowe. We went to Burlington VT on a day trip and enjoyed Lake Champlain and the Church Street area of shops and restaurants. We also went to Newport RI and this is a great area to explore-we especially like the Cliff Walk.
We are already trying to decide where to visit when we are in NH next year. Have fun.

TAW it's better to start your own thread because there can be too many questions/tangents.
Hiking is iffy in May because of black flies. They weren't bad this year because of the drought but most years you don't want to be in the woods.
Some places don't really get going until the tourist season starts. Might be open weekends only. Check schedule at lobster shacks and places like Canterbury Shaker Village. OTH there are some great events in May. Depends on your interests.

Re attractions, shops, and restaurants in this region: you can only absolutely, positively count on finding everything open in July and August. Many things are indeed open from Memorial Day to Columbus Day (as dfrostnh said, sometimes only on weekends after Labor Day), but there are both shorter and longer exceptions.
