LasVegas fine dining..no steakhouses

If you like beer and even if you don't, the German food served by the Hofbrauhaus can't be beat. http://www.hofbrauhauslasvegas.com/
My DW and I had our Christmas dinner there last year.
Even if a famous chef is sitting in the kitchen, you don't know if he/she touched your plate or cooked any of your food.

For really special--I'd choose Joel Robuchon at the MGM or Guy Savoy at Caesar's Palace. Or maybe a couple of the places in the Wynn??
(something about Hofbrauhaus and 'fine dining' in the same sentence gave me a giggle )

Agree with janisj, if you enjoy French food then Robuchon's main restaurant (he also has a slightly simpler L'Atelier next door) is special, and we enjoyed our meal at Guy Savoy too. Bring lots of money though. These guys were both Michelin 3* chefs in France (Robuchon also has 3 Michelin stars for his Vegas restaurant, Guy has two) and during the 1990's Robuchon was generally considered the best chef in the world.
Would also check out Twist if you like experimental food (another famous French chef, Pierre Gagnaire). I think they recently became the 2nd Vegas restaurant to receive Michelin 3* status. And Bouchon is our favorite place for breakfast.

I think they (Twist) recently became the 2nd Vegas restaurant to receive <del>Michelin 3*</del> Forbes 5* status.
Whoa, let me correct my own post ... Twist recently became the 2nd Vegas restaurant to get five stars from the Forbes Travel Guide, which makes them one of about 25 restaurants in the US with this top ranking. Michelin hasn't reviewed the Vegas restaurants since I think 2009 due to lack of sales for the Michelin guidebook.
TrvLr, here's a list of all the Forbes 5 and 4 star restaurants in Vegas:
Forbes Travel Guide Five-Star Restaurants
Joël Robuchon, Las Vegas
Twist by Pierre Gagnaire, Las Vegas
Forbes Travel Guide Four-Star Restaurants
Aureole, Las Vegas
Bartolotta Ristorante di Mare, Las Vegas
The Country Club, Las Vegas
L’Atelier de Joël Robuchon, Las Vegas
Le Cirque Las Vegas, Las Vegas
Michael Mina, Las Vegas
Picasso, Las Vegas
Restaurant Guy Savoy, Las Vegas
Sage, Las Vegas
Shaboo, Las Vegas
Sinatra, Las Vegas

Any thoughts bout Emeril Lagasse's seafood ( our favorite) restaurant?
HappyTrvlr, here's a link to an excellent guide to over 90 Vegas restaurants. I always check Larry's list before dining in Vegas and have found his write-ups give a very good idea of what to expect. There's a short write-up on Emeril's.

Las Vegas is truly a foodie heaven these days. My most recent great meals have been at the new Cosmopolitan. I don't think it has a badly reviewed restaurant. I loved Comme Ca and Milos, and hope to go to Scarpetta soon.
