Last minute, special breakfast stop and easy hike LAX to DHS

Last minute request; waking up at LAX and we will be driving in a couple of hours to Desert Hot Springs to spend the day enjoying the relaxation in the mineral pools. Before we get there we need to stop for breakfast and we are thinking of doing a not too long easy but interesting or beautiful hike along the way.

A few years ago we went to Joshua Tree and loved it, but it's beyond our destination so don't think we want to drive off route. Any suggestions? Anything to not miss stopping at along the way?

Love a great breakfast suggestion, not a chain. We love healthy prepared and unique type of breakfast menus if something like this exists, Great omelets, bennies, etc.

Also, one last question. If anyone has been to Thursday Night event that happens each week in Palm Springs and you have any tips about it, love to know. Thanks everyone!
