VRBO is usually a good bet; you can put your dates in the filter.
You many need to go through a vacation rental agency. Chase 'n Rainbows is good for West Maui. Try Bello Realty or Condominium Rentals Hawaii for South Maui. Oahu has a zillion hotel rooms; better bet there.
I'd just start with the budget hotels in Waikiki, contacting them directly.
