Have you looked at this site for great info on Maui?

We did sunset cruise on a catamaran that sailed with sails, not motor. It was really nice. Paragon Sailing Charter was the name of the company. http://www.sailmaui.com/
Hope this helps...

If you just want the sailing experience with no frills, both the Scotch Mist II and America II meet your criteria. We have taken both and basically they just get you out on the water, but were enjoyable (beverages are served). You might consider an evening sail as well which is fun. Check out the Barefoot Tours website which provides descriptions of most of the available sailboats or sailing cats.
I took the America's II sailing trip (2.5 hour). Cost was about $35, I believe, and all they do is head towards Kapalua and turn around and come back. It was all I was looking for as well. They do have some cracker snacks and water, pop or juice included in the trip. When we turned back towards Lahaina is when we really got ripping. I can really recommend them. This sailboat has some great history. I remember watching it back in the 80's with the America's Cup challenge. Good luck.
