For close to Hoover Dam, you can't beat the Hacienda. http://www.haciendaonline.com/
On a little hill just off their parking lot they sell helicopter rides over the dam and Lake Meade.
Decide now if you want to go to Bryce and Zion or to the South Rim of the Grand Canyon. You could easily find snow at any of these places. If you wanted to stay between Las Vegas and LA on the way home, spend the night at Buffalo Bill's in Primm (Exit 1) in Nevada.

For Grand Canyon,Zion or Bryce call to see if you can get in park lodging. Otherwise look at Cameron Trading Post in Cameron, AZ for GC, Springdale UT for Zion, Torrey, UT for Bryce, Kanab for in between. Or wing it and head for I-40 and look for something along the .

What is your hotel budget? In the park is the best, but you'll need to call daily to see if you can find a room.
If you're just driving through Las Vegas, I would go ahead and go straight to Zion. Get a fairly early start on your day and enjoy the road trip.
Spend the next day in Zion, and leave mid-afternoon and drive to Bryce Canyon.
Get up for sunrise in Bryce (it's magnificent!), drive the loop, maybe hike a bit, then start heading back toward whatever airport you're flying home from.
