For Kaua'i:

1. Boat tour of Napali Coast (only viewable by boat or air unless you hike in all 11 miles, permit needed)
2. Drive to the North Shore, stopping at Kileaua Lighthouse, and visiting the beaches especially Ke'e and Tunnels (get there early for Ke'e and for Tunnels you may have to park at Haena and walk back a short distance), maybe visit the Limahuli National Tropical Botanic Gardens followed by lunch in Hanalei.
3. Helicopter tour if you can afford it, otherwise I have heard good things about Wings Over Kauai which is a fixed wing airplane tour at about half the cost.

I'll leave Maui to the others, been a long time since my last visit.

Since much of our time on Maui in March was taken up with wedding and family stuff, our must-dos were snorkeling and driving the road to Hana.

Hmm my list is:

Maui
1) Sunrise or sunset on Haleakala combined with:
2) A drive through upcountry Maui stopping at: Kula Country Farms for some strawberries and then...Ali'i Kula Lavender for a lavender scone, lemonade and enjoy the views.
3)Road to Hana. Think this should be done at least once in a lifetime. I will do it again at some point as well.
4) Breakfast at Kihei Caffe
5) Snorkeling at Honolua or Blackrock (Kaanapali) or that little beach before big beach in Makena (but it's not Baby beach...can't remember the name but we saw many turtles there)
6) A walk down historic Front Street
7) A meal and/or drinks at Mama's Fish House
8) A walk through the Kapalua area, through the golf course to Dragon's Teeth to watch the waves
9) Eat local-style food at Da Kitchen or Sam Satos.
10) Hang at the many beaches and spend as much time there!


Kauai (only been once so my list is short. Will probably increase after our trip next year!)

4) Visit to south shore, Poipu Beach
5) Grab a to go meal from Sueoka Snack shop and eat on the beach.
6) Drinks or a meal at the Hukilau Lanai
7) Visit one of the western beaches - they were beautiful and huge!
8) Try kulolo - it's a local delicacy made with taro, coconut milk and sugar and apparently it's the best on Kauai
9) Visit the Kauai' Coffee Plantation for samples!
10) Enjoy beach time at one of the many beaches!

I'll add to Maui:

Drive south past Makena to where the black lava from Haleakala's last eruption flowed into the blue ocean.

Visit eerie Iao Valley.

See exclusively native species at the Maui Oceanarium at Maalaea.

I don't care for Black Rock. Too many tourists from the many tall, elevator buildings in Kaanapali find this the only close place to snorkel. A lifeguard station is needed there to manage the mayhem.

Paia Town is a fun, hippie sort of place. Stop in when you're coming down from Upcountry or starting Road to Hana.

Visit touristy Lahaina Town. See the banyan and get a shave ice.

Get out on the ocean -- maybe a snorkel trip to Lanai or just along shore. Choose Blue Water Rafting or a quieter catamaran. You can easily snorkel from shore many places too; in front of the Makeana Beach Resort is one good place to see fish and turtles. All Hawaiian beaches are public and there is free public parking at most of them.

Haleakala (doesn't have to be at sunrise)
Lahaina (the town, walk around, historic tour)
Old Lahaina Luau or Feast of Lele

Top of my to-do list for any island is to restrain myself from seeing and doing stuff just because it's there to see and do. Been to Maui 1/2 dozen times, and still haven't driven the Road to Hana or up to Haleaka. But I enjoyed every trip nonetheless. So ask yourself why you're going to Hawaii, and create your own itinerary/agenda around your answers.

More in the spirit of playing along, my favorite things on those islands include:

Kaua'i - helicopter tour, sunset at Makua, NaPali Coast on a sailboat, dinner, maitais and entertainment at Tahiti Nui, hanging out at Anahola and Moloa'a beaches, shopping at Kamoa Ukuleles, taro chips from Taro Ko in Hanapepe, views of the Kalalau Valley from the top of Waimea Canyon Dr, driving the 5+ miles from Hanalei to the Hanalei Colony Resort.

Maui - Trilogy's Discover Lanai tour, snorkeling at Napili or Ahihi Cove, Slack Key Show at Napili Kai, Kapalua Coastal Trail, watching the surfers, kite and sail boarders at Ho'okipa, poke from the fish market in Honokawai, taking photos along Front Street and listening to the birds under the Banyan Tree.

Both - Talking story with, or listening to locals/natives whose history on the islands goes back for generations, and lying on the beach in the middle of the night gazing up at the stars.

Face is right. The BEST things in Hawaii are just being there, seeing stars in a velvet sky, doscovering sea life while snorkeling, spotting whales (in season), enjoying the soft air. Someone once posted that he'd never been in a place where people think nothing of *walking on flower petals* every day! Visitors keep coming back to get on Island Time and soak up some Aloha more than to check 'sights' off a list.

watch the sun set from you lanai on Kauai sipping wine or cocktails. If you go in January or February, sit on the lanai and watch the whales or catch a whale watching boat excursion. That is enough for me but then I have been there so many times, that is all I really want to do anyway. The list people have given you is great. Also highly recommend on Kauai taking the Maha'ulepu heritage trail just beyond the Grand Hyatt in Poipu. Easy and beautiful. Also if you like to bike ride. Rent bikes and take the 2 1/2 mile paved road that goes by Kealia Beach in Kapaa. Flat and beautiful views
