my wife and I want to go from Kansas City to NYC. She does not drive. How is it best to break this trip up into 2 - 3 days so that I can do all the driving? where are the best stopping cities? How many miles a day driving a safe pace.

Are you sure you want to drive? If staying in Manhattan not only is a car useless but it's a significant expense - overnight parking will be at least $40.
not staying in Manhattan. Staying with family in Queens, going up to family in Hopewell Junction, Out on the Island and in Connecticut. Will be there for a month. long time to rent a car.
If you wanted to make time, you could definitely do it in one night. Otherwise, you'll be passing through St. Louis, Indy and Pennsylvania Dutch country, which might be a good place to spend a day or two.
My mapping program shows the distance to be about 1230 miles.

If you were taking the most direct route, two possible stopping places might be Indianapolis and Akron, Ohio.
That said, along the interstates you will find many places to stop. If the weather is good, you should not have too much problem finding a motel along the way without reservations.
My considered advice is to get an early start (I start at six am) and then drive around 400 miles and see how you feel after that and then continue (or not). The tradeoff between how much time you spend travelling and how much time you spend relaxing may depend on your stamina and that of your wife.
When I travel by myself, I have been known to drive 1500 miles in one day, but then I can be singleminded and stubborn. When I travelled with my wife, I could only do about 1000 miles.
I'd likely stop in Columbus or Pittsburgh. Some recent posts on here re: Columbus, not sure about Pittsburgh.
Thank you for the suggestions. I am recently retired so I am not in a rush. I guess how long it will take will depend on the number of Wal-marts she sees on the way.
