Kansas City trip in August

My brother and I will be staying in Kansas City, MO 8/4 - 8/12/07. We already have a few sites that we are planning to see in the KC MO & KS area and are also probably going to take in a ball game at Kauffman Stadium. We are mid to late 30's males that are into history, museums (art, history, science), aquariums or zoos, trains, river or lake cruises, etc. We will have a rental car, as one of the places we plan to visit is President Truman's birthplace in Independence, MO.

Also, we are into all different types of food; BBQ, German, Steak, Italian, Chinese, Japanese, British, Seafood, etc.

Any suggestions on places to visit?
