I agree St Augustine would make a great day trip for you - so much to see and do there you could even do 2 days there. Anoterh option in the opposite direction is Savannah - a bit further but lovely old southern city.
You *could* do a day trip down to a theme park in Orlando but it's a very long day (I've done it numerous times but not so much in recent years) and spring break will be very busy there.
Lots of places to fish in the Jax area if the family is in to that and while the beaches by Jax are not 'pretty' by southern FL, panhandle or Clearwater standards, it is a beach if you do not live near one or get to see one often. I grew up going to the beaches there and they are just fine though the water would be cold at that time and the air could be as well but more than likely you'll have some warm enough temps to enjoy.
Check to see if there are any ships at Mayport that are doing tours. Don't know if they do that anymore but when my nephews were about 10, an aircraft carrier was in and they had tours. They still talk about that and they are now 24 and 25.
