Itinerary Help for Zion, Bryce, Arches, Canyonlands, & GC

After a bit of research, I have come up w/ a tentative itinerary for a September trip ( first time!) to UT & AZ, but would greatly appreciate some input! We will be flying in/out of Vegas and renting a car. My travel partner and I are both in our early 30s, active, adventure-seeking, and are not opposed to keeping a steady pace (We know we are trying to cover quite a lot during our travel time)! We currently have lodging booked in GC North and Zion. We are not opposed to camping a night or two.

Day 1: Arrive in LV ~1030a. Pick up rental car, stop for groceries, drive to GC North. Hope to see sunset and get in whatever viewpoints/hike(s) we have time for. Stay 1 night in park. 

Day 2:  Monument Valley. Drive to/stay in Moab. 

Days 3-5: Arches & Canyonlands. Hope to do a full day canyoneering adventure w/ Desert Highlights (any trip recommendations, how early to book?) Stay in Moab. 

Day 6: Capitol Reef. Stay in Torrey. 

Day 7: Pick up pie @ Gifford House. Rt 12. Escalante. Stay in Tropic or Cannonville. 

Day 8: Escalante or Bryce. Stay in Tropic or Cannonville. 

Day 9: Bryce. Head to Zion. Stay in Springdale (reserved).

Days 10-12: Zion (Angel's Landing and the Narrows bottom-up are on our must-do list). Stay in Springdale. 

Day 13: Drive to LV

Day 14: Depart for home 

So we are wondering:
Should we stay a second night in GC? If so, where to knock off a night. Torrey? But then have to hurry through Capitol Reef and Rt 12 from Moab to Bryce? If we decide not to do a canyoneering day in Moab, we could shorten our Moab to 3 nights and keep the night in Torrey to ensure enough time for Escalante.  Then we would do a canyoneering day in Zion w/ ZAC. 
Since we don't have permits for the Wave and don't want to risk wasting precious time hoping to be a lucky day-before lottery winner, we knocked Page off our itinerary. Since we won't see Antelope Canyon, any recommendations for other slot canyons we can experience? Zebra & Tunnel in Escalante? 

We really value your knowledge and any suggestions you all may have to make our trip THE trip of our lives (we tackled and absolutely loved Yosemite 2 years ago)!  Thanks!
