Hudson Valley or Finger Lakes

Hi
I am planning my wife's and mine's August trip at NY state.
I am debating whether to spend 1 day at Finger lakes or to spend a day at Hudson Vallye area/Saratoga/Berkshire(MA)/Boston.

We are doing a circular trip which starts at NYC through Niagara falls, 1000 Islands and back to NYC through Hudson Valley.

How many total days is the trip?

What do you like to see and do?

In total its 8 days (not including NYC).
Originally we have planned 2 days for finger lakes including driving, Watkins Glen and Corning, 1 day for Niagara, 2 days for Toronto, 1 day for Prince Edward slow route and Kingston, 0.5 day for 1000 Islands cruise and 1.5 days for Hudson Valley and driving back to NYC.

We love nature, beautiful viewpoints, short hikes (few hours), romantic cities.
We are a couple without children at our early 30.

That is a lot of driving even for eight days. It is 8 hours from NYC to Niagara Falls and about 16 hours from Niagara Falls to PEI and at least 12 hours from PEI to NYC. That in itself is 36 hours of driving not counting diversions, packing and unpacking, meals, etc.

I have meant Prince Edward County which is on the route from Toronto to Kingston and not Prince Edward Island which is far away.

There is a lot to do in the finger lAkes hike the gorge in Watkins Glen,swim ,boat and visit the multitude of wineries. It is a beautiful area.
Corning has great glass museum and really nice downtown with lots of interesting shops and restaurants. Good luck your trip sounds fun!
