Will have @5hours of wait time at the airport for a meeting. Is one airport better than the other for waiting? I can make either location work. I know one is larger than the other...any other pros/cons? Like on-time flights?

I have flown into Hobby several times and have had good experience re: on time arrival and departures. It's a good size airport and I am sure you could occupy yourself.
IF the weather is bad, I think both would be equally subject to delays.
Hobby can only be a "good size" airport in comparison to a landing strip. It's small. Larger than the Albuquerque Sunport, but small by an objective standard.
IAH (aka George Bush Intercontinental Airport, fka Houston Intercontinental Airport) is a large international airport with multiple terminals and various places to shop, eat, vegetate, etc. It is akin to Hartsfield in Atlanta, Denver International, and DFW International in size. It is the 9th busiest airport in the country and 8th in international departures.
None of its terminals are Terminal 3 at Heathrow from an amenities standpoint, but you can kill a good amount of time at Terminal E and take the intra-security link to your departure terminal. IAH is farther from the city than Hobby.
