Help with vacation Christmas thru New Years week

Needing suggestions for destination for this week. We live in Florida so not interested in beaches, like to hike and National Parks. We are in our early 60's but in good health and active. We are not skiers. Wondered about Zion or Bryce at that time of year? We don't want to freeze to death but dry 40's or 50's would be ok.
