Help with Christmas to New Year vacation

We are looking for suggestions for a vacation between Christmas and New Years week. We want some place that is not freezing cold, we are not skiers, we live in Orlando so we go to the beach often. We like to hike and enjoy new experiences. We are in our early 60's but in good health and active. Would love some guidance.
